Garlic Breadsticks

How often do you order Pizza,once a month?twice a month or perhaps once in 2-3 months?Hah,I wish I could say I belong to the last mentioned category but no such luck.We do try to restrict Pizza to once in a month but sometimes the craving gets so bad that we just dial the Dominos number and order 'the same as last' and indulge in our favorite meal.
Garlic Breadsticks

Our order is always the same-one medium deep dish half'n'half pizza(nonveg half for Ajay and veg half for me),garlic breadsticks and coke.It makes for such a lovely meal that we do not mind waiting in anticipation for the whole of next month for our order.

I've wanted to try the garlic bread sticks at home after I took baby steps in yeast baking.My search took me here and I decided to try it out.The result though delicious was no match to the Dominos counterpart I believe but definitely a substitute to have without ordering in Pizza.
Garlic Breadsticks

As Bombay Foodie says,it tastes 'almost' like Dominos.I added a little twist by stuffing some grated cheese in between and it just made it more delicious;)

Garlic Breadsticks
Recipe slightly adapted from Bombay Foodie

Ingredients

Water - 1/2 cup
Instant Dry Yeast - 1/2 tsp
Sugar - 1/2 tsp
Flour - 1 1/2 cups,divided
Olive oil - 2 tbsp,divided
Salt to taste
Garlic paste - 1/2 tsp
Italian seasoning/Oregano - 1 tbsp
Amul cheese cube - 1,grated

Method

In a mixing bowl,add water,yeast and sugar and keep aside for 5-10 minutes or until the yeast bubbles up.Garlic Breadsticks-step1
Mix in 1 cup of flour,1 tbsp olive oil and mix in until the flour is blended in.Cover and let it rise until it doubles-about 45 minutes to an hour.Garlic Breadsticks-step2
To the doubled sponge,mix in the rest of the flour,salt to taste and garlic paste and again mix until the flour is blended in.Garlic Breadsticks-step3
Now knead the flour for about 5-10 minutes or until the dough becomes smooth.Let it rise for another hour or so until it doubles.Garlic Breadsticks-step4
Smear a baking sheet with olive oil and preheat the oven to 200C.
Flour your counter top and roll the dough to a rough elongated circle.Top with the grated cheese and fold the dough to resemble a semi circle shape.Garlic Breadsticks-step5
Transfer it to the baking sheet and smear the rest of the olive oil on top and top with the seasoning/oregano.Garlic Breadsticks-step6
Cut into strips using a pizza cutter and bake for 12-15 minutes or until the bread is golden brown on top.

Notes
  • The original recipe calls for Garlic powder which I didn't have,so I used Garlic paste.
  • The bread doesn't brown much,so go by your instinct with regard to the baking time.It took exactly 14 minutes in my oven.

  13. I tried out your recipe and somehow got it messed up. My garlic bread was very hard. Where did I go wrong?
    Also can you please tell me the thickness of bread while rolling the dough?
    Also should we mead the dough very soft and watery?

    1. Sorry to hear that Arpit.Was your yeast fresh?Did the dough double after the rising stage?The thickness depends on how thick/thin you want your bread to be.I rolled it to about 1/2' thick.The water mentioned in the recipe is perfect for the dough which makes it a bit sticky and soft.

    2. I think my yeast didn't bubbled well and water added in dough was less.
      I will try this recipe again in couple of days and will update you how it went.

    3. One more thing. Can you please tell me which oven you use? (Brand and specifications)?
      I tried it in my onida 20L convection microvae. Used the convection mode to cook.

    5. I had the same problem...:( my bread was hard from the outside and not enough fluffy from the inside.. My oven has three modes toast, grill and bake.. which one should i use for making bread.
      I used the toast mode for this.

Hi divya.. thankx for lovely post. as u have already mentioned the bread doesnt brown on the top. can plz advise if i want to the bread to go little brown shld i be keep it for longer or just smear some butter on top get it brown...? Just also wanted to check if this bread was very soft from outside too ?? as i wanted little but crunchy look from outside. Thank you regards

    1. If you want the bread to be golden brown,take the bread out before the last 5 minutes,smear some melted butter on top and finish baking.The bread is crunchy outside and soft inside:)

  21. I used two-thirds wholewheat flour and one-third maida, ghee instead of olive oil (and added an extra tbsp), substituted part of the water with kefir (fermented milk), added an egg and doubled the garlic. Came out well, thank you.

Wow..i tried n turned out pretty gud for the first time...i gues my yeast was not tat gud..so it didnt rise much while bakin but it was crisp n soft..even my 3yr old daughter who loves cheesy garlic bread ate it..n tat brought a smile on my face n made my first bread baking worth it.And i dnt y my dough was so much tat i made almost 3sets..though i tuk same measurements..And y did my dough didnt rise is it bcoz of bad yeast???

  23. My dough was dam sticky n i kept adding maida in it..while using rollin pin..i simply couldnt roll it flat..y was my dough sticky..??

    1. Did you add the same amount of water mentioned in the recipe?It doesn't matter if the dough is slightly sticky-you should not add more flour since that would be playing around with the flour-yeast-water ratio which eventually messes up the end result.What I do when the dough is sticky is flour my counter top and knead it for a good 5-10 minutes adding about 1/2 tsp fat(butter/oil)if it gets too sticky to knead.In the end the dough will become soft and smooth.

  30. M making just as u wrote here except I used quarter amount of atta instead of full maida. I had active dry yeast which I took a lil less than a tablespoon and let it sit as u said for twenty mins. Now m waiting nervously for the one hour to finish!! Thanks a tonnnneee!   31. Hi again. Thanks for your recipe I ve made your garlic breadsticks more than 6 times and its a big hit. Overtime I ve been experimenting with the atta and maida ratio for flour, every time successful! This time I ve put 100% atta and let's see how it comes out...I ll keep u posted. Thanks again Divya

    Tried ur recipe today n it was so good.. Only that I changed d oven settings to heat d top rod alone at d end.. So that d upper surface of d bread has a golden crust.. Hope this helps wen some one else tries it

  33. Hi I just made this exactly as per recipe using yeast but after baking it is not getting fluppy it's taste like maida maid more kaccha not baked properly. I baked on conventional microwave and not Oven can you please help me why this is happening 😭

    1. Maybe it wasn't cooked through completely,that is why you are getting a raw taste.Please bake it till it is cooked completely and changes colour on top.
