Foolproof Chocolate Brownies


Every time I come across a Brownie recipe,I make a note in my head to try it.Having baked for a while now,I have tried a lot of brownie recipes,some successful and some not so much.One does tend to wonder though,what is the secret formula which ensures brownies come out perfect every single time you bake them?With that crinkle top,fudgy in the middle and delicious in every bite!


I had bookmarked this recipe in Facebook as well as Instagram and today I thought I'd finally try it out.There have been many reviews for this recipe and it was named Foolproof recipe so I couldn't wait to try it out myself.


The moment I opened the oven door to take the brownies out,I had a smile on my face because I was looking at the most pretty crinkle top there ever is! Though I was feeling impatient(as it smelled heavenly) I waited till it cooled down completely and that gave me pretty neat slices.

Arjun isn't fond of any nuts in the brownies so I kept it plain but I'm sure it would taste awesome with some toasted walnuts in it.


Foolproof Chocolate Brownies

Ingredients

Flour -130 gms (sifted)

Sugar - 180 gms (measure and then powder it)

Eggs - 2

Vanilla - a few drops

Dark chocolate - 140 gms

Unsalted butter - 100 gms

Method

Preheat oven to 180C.Grease and line n 8|8 inch brownie pan(square pan).

Melt together chocolate and butter and let it cool down to room temperature.

Beat together eggs,vanilla and sugar till pale and fluffy.

Mix in the cooled chocolate-butter and beat for a minute.

Add the sifted flour and beat just for a while,do not over beat.

Pour the batter into the prepared pan and bake for 25-28 minutes.

Let it cool down completely and then cut into slices.


Step by Step Method

Preheat oven to 180C.Grease and line n 8|8 inch brownie pan(square pan).

Melt together chocolate and butter and

Eggless Triangular Lamingtons

There was a time during earlier days of blogging where I used to bake very regularly.All were trial recipes as I was still in my learning stage,to bake.I remember the excitement and the joy when I shared my baked goodies with friends,to hear good things about my baking,that motivated me to keep on baking.I believe those trials helped a great deal in my journey as without that I wouldn't have any idea about baking,hits or misses.

Now when someone asks me why the cake sunk or why it doesn't cook properly,I know exactly why because it has happened with me too!


Anyway,today's recipe,as usual is a super simple one chosen by my toddler.We watch a lot of cooking videos together,he loves watching Masterchef Australia with me :) and when we came across this video,he asked "amma can you make that"? Of course I had to,though I knew very well he would eat just a piece as he doesn't have a sweet tooth at all.Although I have to say,he loved this cake.

It is a basic eggless cake,baked in a sheet pan and then cut into triangular shapes,dipped first in a chocolate sauce and then in dessicated coconut.It does sound complicated but believe me,it isn't.Make it for a party and enjoy the ooh and aah's :)


Eggless Triangular Lamingtons

Ingredients

Condensed milk - 1/2 cup
Oil - 1/2 cup
Flour/Maida - 1 1/4 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Powdered sugar - 1/2 cup
Milk - 1 cup
Vanilla - 1 tsp

For the Chocolate Sauce

Milk - 1 cup
Cocoa powder - 2 tbsp
Sugar - 1/2 cup
Dark chocolate - 1/4 cup,chopped

Dessicated Coconut - 1/2 cup(or more if required)

Method

Preheat the oven to 180C.Grease and line a rectangular baking tin.I used a 8/11 pan.
In a mixing bowl,beat together condensed milk and oil.
Sieve together flour,baking powder,baking soda and powdered sugar and mix into the condensed milk+oil mix.
Gradually add a cup of milk till the batter comes together,smooth and without lumps.Add in the vanilla.
Pour the batter into the prepared tin and bake for 25-20 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool down completely.

Meanwhile make the chocolate syrup.
Mix together milk,cocoa powder and sugar and cook for 3-5 minutes.
Add the chopped chocolate and let it dissolve.Switch off the flame and let it cool down.

Cut the cake into triangular pieces.The size is according to your preference.

Dip the sides of the cake in the chocolate sauce first and then the dessicated coconut.Let it set for a few minutes and then serve.

Banana Chocolate chunk Muffins


The whole world is reeling under the "Corona scare" and all we can do is take precautions and keep ourselves and dear ones safe by social distancing.Here in Chennai,though people are yet to completely understand the gravity of the situation,we have stocked up on necessities if ever God forbid,there's a lockdown.When it comes to stocking up,how much is enough is a question we need to ask ourselves.Please stock sensibly and spare a thought for those who have no access to supermarkets and online shopping.Do your bit and we'll survive this together :)


These muffins were a result of some over ripe bananas which were waiting to be used up.I usually add it to milkshakes,or mix a banana into my chapathi dough or even better,make dough for Buns.But this time as Arjun has holidays,I made muffins to satisfy the hunger pangs every minute:)


My stash of chocolate chips got over,so chopped up some chocolate and added into the batter.These taste amazing if I may say so myself.Perfect with a cup of milk :)

Banana Chocolate Chunk Muffins


Ingredients

Ripe Banana - 2(I used 4 small)
Yogurt - 1/2 cup
Sugar - 1/2 cup
Melted Butter - 1/3 cup
Egg - 1,beaten
Vanilla - 1 tsp
Flour - 1 1/2 cups
Baking soda - 1 tsp
Salt - a pinch
Chocolate chunks - 1/2 cup

Method

Preheat oven to 180C.Prepare a Muffin pan with liners.
In a bowl mash the bananas.Add sugar,yogurt,melted butter,egg and vanilla and mix well.
Add the flour,baking soda and salt and fold lightly till the batter is thick and combined.Fold in the chocolate chunks coated in little flour.
Pour the batter into the prepared muffin cups till 3/4th full.
Bake for 20-22 minutes or until the muffins turn golden brown and a toothpick inserted into the center comes out clean.
Let it cool and serve it with a cup of milk :)
