Palak & Corn Cutlet


As I am writing this,the whole of India[and many parts of the world]people are glued to the television,myself included.It seems as though everyone is affected by the Cricket frenzy.Facebook and Twitter is on fire,roads are empty,people are gathering in common places to watch the match together,theaters are screening the Final match on the big screen..and what not!

I don't remember when I watched India matches with this much interest and enthusiasm.Probably back in the 90's,when there were only few matches being played and telecast and whenever India played,it was a festival.Now,with so many matches being played throughout the year,the interest kind of fizzled down and at some point,I didn't even know who played for the national team,apart from the big names!

We are having a party at a friends place tonight and I made these Palak and corn cutlets to take along.Mildly spiced with the goodness of Spinach,this one is truly a winner.Now let's hope India lifts the World cup later in the day!


Palak & Corn Cutlet
Recipe roughly adapted from Vanitha


Palak leaves - 1 cup,cleaned and chopped fine
Corn kernels - 1/2 cup
Potato - 2,cubed
Channa dal[Bengal gram dal] - 2 tbsp
Green chilly - 1,finely chopped
Coriander leaves - 3-4 tbsp,finely chopped
Chilly powder - 1/2 tsp
Garam masala - 1/2 tsp
Salt to taste
Bread crumbs - 1 cup,or as required
Oil - 1 tbsp + to fry the cutlets


Pressure cook the potatoes and dal together for 10 minutes or for 4-5 whistles.Let it cool and then mash well,keep aside.
In a kadai,add oil and saute chopped green chilly,palak,corn and coriander leaves till the palak starts wilting.
Add chilly powder and garam masala and saute well.
Mix in the mashed potato-dal,salt to taste and stir until everything comes together.Let it cool.
Take small balls of the cooled cutlet mix and flatten a little by keeping it between your palms.Roll in bread crumbs and keep aside.
In a shallow frying pan,add oil and shallow fry the cutlets till cooked and browned on both sides.
Serve hot with Tomato ketchup or Mint chutney.


We got a Cricket bat personally signed by all the Indian players including the coach.Right now,it is just an autographed bat by the Indian team,if the team lifts the cup,it is going to be extra special!All the best team India!!

Updated - Team India lifted the World Cup after 28 years,a nail biting match..what a victory!!
