Lobia Masala & Jeera Rice | Easy Lunch Recipes

Lobia Masala
Sunday mornings are typically lazy mornings at our place.I'd have decided on the breakfast and kept everything ready the previous night because by the time we finished reading our papers and had our morning tea,we'd be starving.It is mostly Masala Dosa or Puttu Kadala for breakfast so that we'd be full after the breakfast which would give me enough time to laze around before I even think about making lunch.

Last Sunday,we set about repotting our small balcony garden.Ok,Ajay did all the work while I sat on the swing giving my unwanted tips and ideas.
garden2 I'd already decided on the Lunch menu too the previous night and precooked the lobia and the masala,so making lunch was a breeze.I have never used Cowpeas/Lobia in a North Indian curry before,so when Bharathy posted it a while back,I was quite eager to try it out.Made a very simple Jeera rice to pair with it and the combo is an instant hit.

Ingredients

Cowpeas/Lobia/Black eyed beans - 1 cup(I used white)

For the Masala

Oil - 2 tbsp
Onions - 2,sliced
Tomato - 2,sliced
Ginger garlic paste - 1 tbsp

For the gravy

Oil - 1 tbsp
Red chilly powder - 1/2 tsp
Haldi powder - 1/4 tsp
Pepper - 1/4 tsp
Garam masala - 1/2 tsp
Salt to taste
Lime Juice - 1 tsp

Method

Lobia Masala-step1 
Wash the cowpeas in running water and soak in enough water for 2-3 hours.Pressure cook till soft but not mushy.It took around 4-5 whistles in my pressure cooker.
Lobia Masala-step2 
For the masala - In a non stick kadai add oil and saute onions till they start changing in colour.Mix in the ginger garlic paste and tomatoes and saute till the tomatoes get cooked and become pulpy.
Switch off the flame and let it cool.Grind to a smooth paste adding very little water.
Lobia Masala-step3 
For the gravy - In the same kadai,add oil and saute the masala paste for 1-2 minutes.
Mix in the red chilly powder,haldi,pepper,garam masala and salt to taste.
Lobia Masala-step4 
With the back of a spoon,mash the cooked lobia slightly so that some get mashed and some retain the shape,this helps in thickening the gravy.
Add the cooked lobia along with a cup of water and let the gravy come to a boil.
Lobia Masala-step5 
Simmer for 4-5 minutes or till the curry thickens.
Add coriander leaves,lime juice and switch off the flame.


Jeera Rice

Ingredients

Basmati Rice - 1 cup
Oil/ghee - 1 tbsp
Jeera - 1 tsp
Green chilly -1,sliced
Mint leaves - 2 tbsp
Coriander leaves - 2 tbsp
Salt to taste
Water - 2 cups
Kesari colour - a pinch mixed in water

Method

Wash the basmati rice in running water till the water runs clear.Soak in enough water for 20 minutes.
Jeera Rice-step1 
In a pressure pan add oil/ghee and splutter jeera.
Mix in green chilly,mint and coriander.Add the rice and mix well.
Mix in water and salt to taste and cook exactly for 1 whistle.
Jeera Rice-step2 
Switch off flame and let the cooker come to room temperature.
Open the lid and pour the colour mixed in water.Close the lid and let it remain closed for 2-3 minutes.
Open and fluff with a fork.

Eggless Snowball Cookies | Holiday Baking

Blink and December is here already and with it,the festive spirit too.With a definite chill in the air and a holiday atmosphere all around,this has got to be my favorite month of the year.I shook myself and got out of my baking sabbatical,for Christmas is too dear and precious that I had to start baking!

I had bookmarked these cookies long back from Simply Recipes and these turned out delicious.They look so Christmas-ssy too!

A simple cookie with added crunch from cashewnuts and flavored with vanilla and drenched in powdered sugar,these make for a great homemade gift as well.

Eggless Snowball Cookies

Ingredients(makes 22-24 cookies)

Flour/Maida - 1 cup
Cashewnut - 3/4 cup,chopped
Sugar - 3 tbsp
Salt - a pinch
Butter - 113 gms
Vanilla - 1 tsp
Powdered sugar - 1 cup

Method

Preheat oven to 150C.
Snowball Cookies 
In a mixing bowl,mix together the dry ingredients - flour,cashewnuts,sugar and salt.
Snowball Cookies 
Mix in butter and vanilla and knead lightly with your fingertips till you get a smooth dough.
Snowball Cookies 
Make small balls of the dough and place on a cookie tray with an inch of a space between each cookies.
Bake for 30-35 minutes.
As soon as the cookies are baked,place them on a wire rack and when they are still warm but cool enough to handle,roll them in powdered sugar.
Place them back on the wire rack to cool completely.
Snowball Cookies Notes

  • The original recipe called for Walnuts which I replaced with cashew nuts,I reduced the amount used too since I didn't have enough cashews.This resulted in a cookie with a cashew crunch in every bite.
  • I felt the dough was a bit sticky and hence refrigerated the dough for 20 minutes till it was sturdy enough to handle,don't be tempted to add more flour since it would result in hard cookies.

Food Photography Workshop,Chennai

Ever since I started my blog in 2008,one thing which I've been constantly trying to improvise is the content.Be it the recipes,or the writing or pictures,I've tried my best to create a good post every time I sit down and hit compose.Over a period of time,my camera changed.From a basic p&s to a better p&s.I realized the pictures were getting better but still,there was something lacking.

I was delighted when I saw Aparna of My Diverse Kitchen was coming down to Chennai for a Food Photography Workshop.Only thing I was wary of was going there with a p&s.Mind you,I am very proud of my camera but I didn't want to be in an awkward position and make others(and myself)uncomfortable.But Aparna assured me that the camera is only secondary and I was most welcome to attend the workshop.

I am so glad that I went.

I was new to Anna Nagar,had never been to Kettle and was going to meet Aparna for the first time.Strangely I did have butterflies in my stomach,not that anyone knew of it:)
Kettle is a quaint little tea house in Anna Nagar which serves Teas and Desserts and food that generally pairs well with Tea.I am a big Tea drinker and my tea has to be milky,sweet and strong.We were served just that with a hint of masala in the Masala Chai served typically in a glass.The Sandwich was delicious too,only we were too immersed in the conversation to give attention to the food:)The lunch was delicious with Curried Pasta and Oreo Ice Cream for dessert.
The workshop was an informal one with Aparna sharing most of her tips and tricks.Never was there a dull moment,how can there be when pictures taken by her were shown as examples:).She is so serious about photography in general and encourages you to be too.A look at her blog and you'll know why she is so popular.She was so helpful during the shoot and asked us to practice,practice and practice some more.Thank you Aparna:)

It was also an opportunity to meet like minded folks.Nithya,Shalini,Kajal,Rajani,Aparna,Meena,Ram and Lata.In short,a long day well spent.Aparna also made sure we didn't go back empty handed.A goodie bag from Urbandazzle was the icing on the cake:)
