Eggless Molten Chocolate Lava Cake

For weeks together,we scheduled our dinner at 9 only so that we could watch Masterchef Australia together.We absolutely loved it and watched it from the very beginning till the finale.The invention tests,the team tests and the cooking challenge for the immunity pin,ah I am missing it so much!!Sadly,our Indian counterpart was no where near the Australian one and I didn't tune in to watch it at all,the TRP tricks they used were too much for me to sit through the whole episode.Here's an interesting article which explains it all.
So it was with apprehension I decided to sit through this video that a reader sent me asking me to check out the recipe.Ever since I've had success with Molten lava Cake(one of the most popular recipe on this blog)I've been getting queries for an eggless version.Many of you have also tried the same recipe replacing eggs with condensed milk and curd successfully.
Since I've been off sweets for a while and since 'anything' chocolate was a welcome indulgence,I decided to try this one out.The recipe is very similar to a basic eggless recipe,only thing,the lava here is chocolate chips and not uncooked batter.The cake baked beautifully and lava oozed out well.Though I prefer my previous recipe for Lava cake,since it is more chocolaty and rich,I wouldn't mind this one on a no-eggs day too.
Eggless Molten Chocolate Lava Cake
Recipe source- Shipra Khanna Masterchef India


Ingredients


Maida – 1 cup

Baking powder – 1 tsp
Baking soda – 1 tsp
Cocoa powder – 6 tbsp
Salt a pinch
Chocolate Chips – ¼ cup
Cherries – ¼ cup
Butter - ½ cup
Curd - ¾ cup
Caster Sugar - ¾ cup
Milk - 1 cup
Coffee powder - 1 tsp*

Method

Preheat oven to 180C.
Sift together dry ingredients starting with maida,baking powder,baking soda,cocoa powder and a pinch of salt.
Mix together cherry and chocolate chips.
Mix milk with coffee powder and keep aside.**
Beat together butter,sugar and curd till creamy.
Add sifted dry ingredients and coffee/milk alternately and mix well till you get a smooth batter.
Grease and flour muffin moulds with butter.
Pour 2 tbsps batter into the moulds and layer with cherry-chocolate filling.Pour another 2 tbsp batter on top of it.
Bake for 10-12 minutes.

Notes
  • The size of my ramekin is small hence the batter makes enough for 6-8 muffin moulds.
  • The temperature for baking differs in each oven so bake till the top looks firm but the center slightly jiggles when you shake the ramekin.
  • *The original recipe calls for milk,I decided to add some coffee for an extra punch,you could use plain milk if that is what you prefer.
  • Here is my Molten Lava Cake and the Cupcake version.

  1. I had tried the recipe after watching Shipra khanna's recipe. I made a few changes and it worked well for me. Since I don't eat eggs, to find an eggless recipe for chocolate lava cake was a delight!

  23. Was excited to make the eggless moulten lava cakes as my 10 yr old son has an egg allergy. Perhaps our ramekins are large, but cooked over 20 minutes at 350 degrees F (~180 C)and the centers were runny. To quote my 8 yr old girl "next time less goo, and more cake." Made 6 ramekins and what was not consumed moments after baking we tossed as no one even enjoyed the first round.

    1. Hello Anon,as I always say,every oven is different and irrespective of the time mentioned here for each bakes,it is only to give an idea of the baking time.As and when you bake in your oven,you will get an idea how it works when it comes to different recipes!

    1. Where are you based at?If you do not find chocolate chips,use chocolate chunks,use your favorite chocolate and chop it into chunks.

  25. I made these yesterday. I followed the recipe to the 'T'!! i baked them for 12 min and when i took them out, they sank!! why do you think that could have happened?

    1. The cake could have sunk for several reasons.Was the baking powder and baking soda you used fresh?Did you over beat the batter?Was the cake batter too liquidy?

Hi Divya, I made these today ..no molten lava and all ;) it was gooey inside and felt nice to bite those cherries :D it was kind of fudgy and very yummy !!!I ate very moderately ...just 8 of them :D:D even my hubby who hates cakes and desserts loved this one!!i also made dulce de leche your way today using amul can.it was yum , but nothing beats our good old condensed milk in my personal opinion :D

    1. You can try baking this in cupcake molds,should work fine.I have given the temperature for baking in convection mode.

    1. It is not essential,but the chocolate chips give the effect of lava when baked.Not sure if you'd get the same result without that!

  31. very easy recipe, but whenever i bake it in my ifb mw with convection mode on same temperature it is fully cooked from outside and raw from inside and takes a lot of time,, whats the reason

Hi Reetu,as I always mention every oven is different,even if it is of the same model.For instance,my 25ltr IFB baked perfectly,but the new one which is 30 lts takes more time.If the top looks cooked and is raw inside,try baking at a lesser temperature for more time so that the top and the inside cooks evenly.Happy Baking!

    1. I am not sure what you mean by ordinary oven.I baked this in my Microwave Convection oven.You can bake this cake in an OTG too.

    1. Using the Microwave Convection mode,preheat the oven to 180C and when done bake for 10-12 minutes at the same temperature(180C)

  40. my cake was cooked perfectly on the outside but when i turned it upside down it was liquid . i have an ifb 30 ltrs and cooked it for 32 mins at 180C after preheating . what could be the reason ? pls rply soon .

  41. Hi, looks yummy, I'm going to try this in the morning. I usually find that curd makes a cake heavier, stocky and somewhat dry, can it be replaced by condensed milk? If so by how much?
