Instant Paneer Curry | Easy Paneer Recipes

Hello,knock knock-did any one miss me around?I know I've been away just for a while but it is not very often I disappear just like that:).Been down with viral fever and cough and feeling terrible.A fever does put you back into place,never have I felt so helpless,weak and miserable.Anyway,back to business now and the first thing I cooked after one full week is this simple Paneer curry.

I love Sunday lunches,which mostly consist of a Biryani/Pulao,a Paneer curry or a Gobi Manchurian,lots of raita and lijjat pappad.This Sunday was no different.I resorted to a simple paneer curry,recipe courtesy my sis-in-law Soumya.Her dishes are always simple and delicious.She doesn't like to stick around in the kitchen much,so it is always short cut dishes without compromising on the taste.

Ingredients

Paneer - 200gms,cubed and shallow fried
Onions - 3,chopped roughly
Carrots - 2 medium,chopped roughly
Tomato - 3,chopped roughly
Cashewnuts - 4-5
Cinnamon - 1' piece
Cloves - 3-4
Cardamom - 2
Milk - 1/4 cup
Ghee+oil - 1 tbsp
Chilly powder - 1 tsp
Salt to taste
Frozen peas - 1/4 cup(optional)
Kasoori methi - 1 tbsp

Method

In a mixer jar,grind together
onions,tomatoes,carrots,cashewnut,cinnamon,clove and cardamom to a smooth paste by adding enough milk to ease the grinding process.

In a non stick pan add ghee+oil and saute this paste for 5-7 minutes.If the paste is too thick,you can add more milk or hot water. Instant Paneer Curry-step2
Mix in chilly powder and salt to taste.

Now add the peas(cooked for a minute in full power in the microwave)if using,shallow fried paneer and kasoori methi and let it cook for another 5-7 minutes.

Notes
  • Adding carrots gives the curry a natural orange hue and a thick gravy.You can thin down the gravy using milk or water.
  • The curry can be made with paneer alone or can be combined with other vegetables like peas,capsicum etc.
  • The gravy works well as a base for vegetable curries too.

Never in my dreams did I think I'd bake a bread like this some day.Heck I didn't even think I'd bake stuff at home!Anyway,baking bread is still like magic to me.I find the procedure so therapeutic,like it is for many.The measuring,kneading and proofing the dough all adds to the charm of bread making.

I love recipes which do not require fancy ingredients.After all to bake bread you only need flour,yeast,sugar salt and water right?It is with this thought I approached this recipe aptly named 'Grandmother bread'.I tried out the base version once and liked it.So decided to try this pretty braided bread filled with Apple chunks and Cinnamon.It is indeed a heavenly combo!

Method

I made the dough in the food processor.You can knead it by hand too. 
Apple Cinnamon Braided Bread 
Mix together flour,salt,sugar,1 1/2 tsp gluten(optional),yeast and warm water to a smooth and pliable dough.

Knead for 5-7 minutes or till the dough becomes silky and soft.

Lightly oil a bowl and place the dough in it to proof.(about an hour or so)
For the filling -

Mix together butter,brown sugar,flour,cinnamon and apples.

Roll the dough to a rough 8/12 rectangle on floored surface.Spread the apple filling in the middle.At the sides of the filling,cut the dough at 1' intervals.
Fold dough strips over the filling to wrap alternating to make a braid.
Carefully remove the loaf to a greased baking sheet.Brush the top with melted butter and cinnamon.
Let it rise till doubled.
Bake at 180C for 30 minutes.

Eden will always be a very special restaurant to me.Not only because of the food but because,it was one of the first restaurants Ajay took me to after coming to Chennai.I still remember what I had that day.Despite him telling me that it was a vegetarian continental food restaurant,I'd ordered for a plate of Veg Pulao and Kadai Vegetables and couldn't understand what the big deal was.The food was awesome and we kept coming back to the place though what we ordered changed from time to time.

Last few years,our order has been exactly the same.So much so that the waiters smile when we place the order:).Posting here a few additional dishes we ordered when we were with friends.

We always start the meal with Corn on toast.Before you assume it is just curried corn over a piece of toast,let me interfere,it is much more than that.Soft and juicy corn kernels in a tomato-cream sauce spiked with green chillies served over toast,this one is a winner.Thanks to a dear friend who introduced this dish to us,what would we do without it!

We ordered this Cauliflower Fry last time as we were there with friends and wanted some kid-friendly snack as starter.Do not compare it with the usual Gobi Manchurian or Gobi 65 as this is simply a lightly spiced cauliflower fry with sauteed onions.

Eden,Chennai The menu is a mixed bag of dishes,they serve a variety of vegetarian continental dishes as well as a limited choice of North Indian and South Indian dishes.So you wouldn't get the regular Fried rice here but flavourful Vegatable Pulao which tastes great and can be had on its own.

Here comes our favorite dish Garden Style Vegetable Bake.I think I can have this dish everyday for the rest of my life,only I wouldn't live long if I had this daily;).Jokes apart,this is one of their signature dishes.Broccoli,Cauliflower,Carrot,Baby corn and Mushroom baked in a cheese sauce and served with toast.Just.too.good!

The finishing dish,Baby corn and Mushroom saute.Perfect rice and curry kind of a dish.Crunchy baby corns,juicy mushrooms,red peppers and onion rings in a spicy pepper sauce served on a bed of herb rice.

If you have space for dessert,don't forget to try their most popular "the last time I ever saw my waist".Chocolate and Vanilla ice cream with chocolate brownie,hot fudge sauce,chocolate chips,toasted nuts and whipped cream,it is a chocolate lovers dream.

A meal for two including a starter,main course and a dessert would cost about 700-900 INR.

We are a dosa loving family and don't mind having dosa as breakfast(or even dinner!)at least 2-3 times a week.Grated coconut in the freezer and dosa batter in the fridge lets me sleep peacefully knowing well that the breakfast part is well taken care of for the next day.

To make dosa even more interesting,we have Masala dosa and a notch higher Kanchipuram Masala dosa on some days.So I had no doubts we'd love this version too which Anu had on her blog a while back-Chettinad Masala dosa with a Cauliflower filling.

My version looked a bit like a stuffed paratha filling,nevertheless it tasted awesome and made for a great brunch.

Ingredients

Dosa Batter - 1 cup


Cauliflower Masala Dosa-ingredients

For the Chettinad Masala

Cauliflower - 5-7 big florets,finely chopped
Onion - 1,finely chopped
Tomato - 1,finely chopped
Oil - 2 tsp + 1 tbsp
Mustard seeds - 1/4 tsp
Jeera - 1/4 tsp
Red chilly - 1,broken into 2 or 3
Garlic - 2 cloves,finely chopped
Ginger - 1' piece,finely chopped
Green chilly - 1,finely chopped
Curry leaves - 1-2 sprigs
Haldi - 1/4 tsp
Rasam powder - 1/4 tsp
Red chilly powder - 1/4 tsp
Coriander powder - 1/4 tsp
Sambhar powder - 1/2 tsp
Salt to taste
Coriander leaves for garnish

Method

Prepare the chettinad masala filling Cauliflower Masala Dosa-step1 
In a kadai add 2 tsp oil and splutter mustard seeds and jeera.Add red chilly bits.Now mix in ginger,garlic,green chilly and curry leaves and saute till the garlic starts to brown.

Mix in the onions and saute till they turn translucent.Add tomato,followed by cauliflower and give a good mix.

Now add the masala powders one after the other starting with haldi,rasam powder,red chilly powder,coriander powder and sambhar powder.Add enough salt to taste and mix well.Cover with a lid and let the masala cook for 5-7 minutes.

Open the lid and start mashing the masala so that everything gets mixed well.Mix in coriander leaves.

Smear the dosa pan with some oil and wipe with a tissue paper.Pour one ladleful of batter and spread into a thin circle.Pour a tsp of oil/ghee on the sides and let it cook.
Add a spoonful of masala on top of the dosa and smear it well.Fold over the dosa and serve hot.

Some time back,Maria asked me to do a guest post on her blog.I start panicking when someone asks me for a guest post.Reason being,it has to be on par with the posts on that particular blog and it should entertain the readers in a similar way(if not same)like the author's own posts.Now that is a difficult thing to achieve,right?Especially with a blog like Maria's!

 Maria,of Mariasmenu is more than a fellow blogger to me.We've studied together in the same college for 5 years without knowing that few years later,we'll connect again through food blogging.I'd been following Mariasmenu much before I started blogging without knowing that she is actually my fellow college mate!

For the same reason,I am hoping that she'd forgive me for taking so long to do this for her.I hope I can do justice to your blog readers Maria.
